So I made Gascon stew. Sort of. The Joy of Cooking recipe was close to possible; I had most of the ingredients. For various reasons, I didn't want to leave the house today, so I couldn't pick up the rest, and wound up improvising wildly. No salt pork? Use bacon! No beef bouillon or tomato sauce? Er, well, how about vegetable bouillon and chicken stock?
And so forth.
The first helping was... decent. The flavors haven't melded properly, I think. JoC says Gascon stew tastes better the next day; I figure there's a good chance the same will be true of this stuff.
Buster and Gracie licked the bowl clean. I'm not sure that says much, though.
