Peanut Soup

One of the Bujold listies posted a recipe for Spicy African Peanut Soup last week. Since I had several of the ingredients on hand, and since I hadn't chosen this week's meals yet, I decided to make a pot.
Even though I forgot to add the rice, it's been delicious. The broth in particular is flavorful, and there's enough variety of taste and texture in the various vegetables to satisfy.
The only problem I'm having is that she didn't indicate how many servings the recipe made. I've eaten, let's see, nine bowlsful, and there are probably three or four left. She said that it would keep in the refrigerator for five days - which is through today. I'll probably go one more day, but I'm certainly not going to finish the pot.
Sigh.
