As I think I've mentioned before, I'm pretty much a by-the-book cook, not a creative one. Still, sometimes it's just not possible to play by the rules....

I decided to try another variant on pilaf, this one a straightforward chicken, rice, and mushroom recipe. I noted down the ingredients and headed off to Shop'n'Save.

The recipe called for button mushrooms. SnS didn't have any, so I bought the same weight of somewhat larger mushrooms; instead of just patting them clean, I tore them into smaller pieces with my fingers. (I find that both faster and more satisfying than chopping them.)

The recipe called for 5 oz of light cream. I picked up a small carton... and left it in the shopping cart. Or so I presume; at any rate, it was nowhere to be seen when I got around to needing it. I went with 8 oz of 1% milk - the best I had - instead.

The recipe called for tarragon. I thought I had tarragon. I was mistaken. Let's see, what goes with chicken? I substituted thyme.

And you know what? It all worked. Very tasty indeed.
