Despite the fact that it's crunch time for this semester - finals are about two weeks away - I've been disgustingly indolent lately. I've had ideas for a number of substantive posts, but haven't had the oomph to actually write them.
In lieu of that, here's a cookery post.
After lapsing for a few weeks back into frozen-dinner land, I've begun cooking for myself again. I found a cookbook I'd forgotten about, Supercookery, which has bunches of interesting recipes, all categorized by time, expense, and difficulty. This week I made Pilaff with Pineapple and Cashew Nuts. This is the first time I've fixed something for which the first step is frying a panful of chunked pineapple and raisins.
The cooking process was enjoyable. Once the pineapple mix has been fried, you start over in a new pan, frying, adding an ingredient or two, continuing to fry, adding another ingredient, and so on. Chopped scallions. Cashews, coriander and cayenne. Rice. The pineapple mix. Chicken stock. The succession of odors was a treat in itself.
The dish itself - I've had two helpings - is pretty good, not great. I made a mistake with the coriander; the recipe calls for coarsely crushed seeds, which I didn't have and couldn't find. I used finely-ground coriander, but neglected to reduce the amount correspondingly. As a result, it's a bit too much on the hot side. But it's good.
