Stoking the Furnace
Feb. 9th, 2008 02:31 pmOne good thing about this week: on Sunday, before the flu really set in, I managed to whip up a batch of spinach-rice casserole, from a Moosewood recipe. A huge batch: the recipe called for two full pounds of spinach, among many other things, and I had to break out my auxiliary casserole dish to take the overflow. I've had six helpings so far, and there are two or three more left.
I wasn't that pleased with it the first day, but once it had had a chance to sit and meld in the refrigerator it improved sharply. The recipe, in addition to spinach and rice, called for grated cheddar, egg, sunflower seeds, onions and garlic, and the combination of flavors and textures is a good one. (One mouthful this afternoon actually put me in mind of rather bland chicken. I'm not sure how that happened.)
Anyway, at least I've had good, plentiful, and hot food to keep the fires burning while my body fights the invaders. I just hope it'll outlast the flu.
